My husband loves pudding especially chocolate pudding. So, when I decided to stop eating dairy I knew I wanted to find a great vegan chocolate pudding recipe and I found it! This is creamy, dreamy and will fool any dairy-eater anywhere, anytime! I used the dark chocolate unsweetened cocoa powder and it truly was delicious. My husband loved it! Success! Ladies, if you need a serious chocolate fix this will do the trick! It's doesn't take long to make and I have to admit I licked the pot clean. This is going to be a regular in our house and I hope it will be in yours as well :)
The Best Vegan Chocolate Pudding
1/2 cup sugar
1/3 cup unsweetened cocoa powder
1/4 cup cornstarch
1/8 tsp salt
2 cup unsweetened almond milk
1 tsp vanilla
In a medium saucepan, sift together sugar, cocoa, cornstarch and salt. Whisk in almond milk until no lumps remain. Over medium heat, bring mixture to a boil, slowly whisking to ensure nothing sticks to the bottom of pan. Boil until mixture thickens (approx 2 min). Whisk in vanilla. Remove from heat. Pour in ramekins or bowls. Top with Coconut Whipped Cream and fresh sliced strawberries.

Coconut Whipped Cream
Can full fat Coconut milk2 tbs confectioners sugar
1 tsp vanilla
Chill can of coconut milk in fridge over night. Remove can from fridge trying not to shake it up. Open and scoop out thickened coconut leaving watery liquid behind into chilled mixing bowl. Add confectioners sugar and vanilla. Whip with mixer until desired consistency.
